Ingredients:

200 g pasta (penne/spaghetti/fusilli)

1 tbsp dried blue pea (butterfly pea) flowers / 1 tsp blue pea flower powder

2 tbsp olive oil

3–4 garlic cloves (finely chopped)

1 medium onion (sliced)

1 cup mixed vegetables (bell peppers, zucchini, or broccoli)

½ cup cream / coconut milk (for vegan option)

½ tsp black pepper powder
-
½ tsp chili flakes (optional)

Salt to taste

Parmesan or grated cheese for garnish (optional)
Method:
Step 1: Infuse the Pasta Water

Boil 1 liter of water in a pot.

Add the dried blue pea flowers and let them steep for 2–3 minutes until the water turns deep blue.

Remove the flowers (or strain if using powder) and add a pinch of salt.

Step 2: Cook the Pasta

Add pasta to the blue pea flower water and cook as per packet instructions until al dente.

Drain the pasta, reserving a little of the infused water. Set aside.
Step 3: Prepare the Sauce

Heat olive oil in a pan.

Add garlic and sauté until fragrant.

Add onions and cook until golden.

Toss in mixed vegetables and sauté for 3–4 minutes.
Step 4: Combine Pasta & Sauce

Pour in cream or coconut milk and season with salt, pepper, and chili flakes.

Add the cooked pasta and a splash of the reserved blue pea water for extra color.
