INGREDIENTS:

1 tbsp neem flowers (fresh or dried)

1 medium tomato, chopped

1 small ball of tamarind, soaked in ½ cup water

1 tsp black pepper, crushed

1 tsp cumin seeds

2 cloves garlic, crushed (optional)

1 tsp mustard seeds
-
½ tsp turmeric powder
-
5–6 curry leaves

1 tbsp ghee or oil
-
2 cups water

Salt, to taste

Fresh coriander leaves, for garnish
METHOD OF PREPARATION:
Step 1: Roast the Neem Flowers

Heat ghee or oil in a pan.

Add the neem flowers and roast them until they turn golden brown and aromatic.

Remove from the pan and set aside. This step reduces bitterness and brings out their unique flavor.

Step 2: Temper the Spices

In the same pan, add mustard seeds and let them splutter.

Add cumin seeds, curry leaves, and crushed garlic (if using).

Sauté for a few seconds until fragrant.

Add the chopped tomato to the pan.
