Here’s how to make this simple yet elegant treat step by step.

INGREDIENTS:

  • 3 fresh hibiscus flowers (use only the petals)

  • 2 cups water

  • 2 tbsp sugar or honey (adjust to taste)

  • 1 tbsp lemon juice

  • 2 tsp agar-agar powder (or gelatin, if preferred)

 

METHOD OF PREPARATION:

Step 1: Prepare the Hibiscus Petals

If using fresh hibiscus remove the petals from the hibiscus flowers and rinse them thoroughly under running water to remove any dust or insects.

Step 2: Boil and Infuse

In a small saucepan, bring 2 cups of water to a boil. Add the hibiscus petals and let the mixture simmer for about 5 minutes until the water turns a deep pink or reddish hue.

Step 3: Strain the Liquid

Turn off the heat and strain the mixture through a fine mesh or cheesecloth. Discard the petals and retain the hibiscus-infused liquid.

Step 4: Add Flavor

While the liquid is still warm, stir in 2 tablespoons of sugar or honey and 1 tablespoon of lemon juice. Mix until the sweetener is fully dissolved.

In a separate bowl, dissolve 2 teaspoons of agar-agar powder (or gelatin) in a few tablespoons of warm water. Stir until fully dissolved and smooth.

Add the dissolved agar-agar or gelatin into the hibiscus liquid. Heat gently for another 2–3 minutes, stirring continuously to ensure everything is well combined.

Pour the mixture into clean molds, ramekins, or small serving cups. Let it cool slightly at room temperature before refrigerating.
